Our Wines - We are making our own wines from our organic vineyard. We produce both Red and White
village wines with a distinctive taste that compliment all meals.
We know
that the ancient wine makers on Crete never used fertilizer
that were not naturel and healthy for the grapes, so we have adopted the same thinking.
We water our vineyard with spring water, the grapes grow in the summer sun and in August and September depending on the season we havest them. We wash
the grapes press them for the pure juices, then we ferment the grapes juices
in barrels, filter the wine and them serve the wine to you.
Crete Wines - Cretan wine has a long history. Minoan wines were produced before 1600 BC. Crete wines are not listed among those specially prized in classical Greece.
Cretan wines make up 20% of Greek wine production. Wine making is a
2000 year old practice on the island of Crete. Dionysos, the God of
wine-making, fun and friendship, celebrated with Ariadne, the daughter
of King Minos.
The Roman Empire in the second century
AD, a sweet wine was produced named protropos. Medieval Europe in
the 14th -16th century Crete
wines were listed individually in Europe. These wines were highly valued in several sources from western and northern Europe. The wines were among the
healthiest, forming part of the Mediterranean and Cretan diet. Within all meals the more ingredients, the more
the flavors compliment each other. This particularly importance when complimenting food wines should be selected of a particular meal.
Village Wines - Wine is a perfect blend with food; the taste
buds bring out all the natural flavors. Crete and Greece
produces fine quality
wines from full-bodied earthy taste to light crisp fruity wines.
