Olive Oil - We produce
our very own olive oil in the old part of Gouves.
During the long summer season the trees are watered, tendered, and cared for. This is
the important time of the trees cycle to produce the essential growth of our
Greek olives.
Oil Formation - At the end of the summer, olive trees begin to produce golden yellow oil in the numerous green-blue leaves, which therein after is transferred for storage into the olive fruits.
This oil process continues into autumn into late winter the fruits ripen and begin the harvesting period. The brilliant
sunny autumn and winter days form the valuable virgin oil in the olives that are by now in abundance on the trees.
Harvest - Following harvesting the olive fruit is transferred to
the olive press where they undergo various processes in order to extract the
oil. The processes, which take place at the olive press, follow specific rules
in order to achieve high quality. Following many years of research and studies
at local level, the factors and conditions, which degrade quality at the olive
press, were defined the rules. These rules need to be followed at olive presses
in order to avoid this quality degradation to produce high quality olive oil,
were established. The first process, which the olives undergo at the press, is
temporary storage and placement of the sacks in small piles on pallets. This
step is intended not only to facilitate movement but also to ventilate the olives
avoiding fermentation. The olives remain in this position for two days at most
until they are moved onto be processed.
Organic Extra Virgin Olive Oil -
Organically farmed, and harvested by traditional handpicking and
mechanical up to date methods. The olives are totally grown under strict
natural environmental conditions. These organic trees are fed, with only pure
mountain waters along with the suns enriching photosynthesis properties to
fully increase the true yield....
Together producing natural olives traditionally cultivated over the centuries, before the advent of none organic farming methods. These
distinctive organic olive oils contain no more than 1.% or less acidity. These
are judged to have a superior food dressing taste. The olive groves produce
olives with a distinctive flavor, scent, texture, and golden colour.
